In the Kaiserstuhl, Eichstetten and in the far west in Jechtingen, the grapes grow on volcanic soil, high on the hill. Great, passionate winegrowers like Alexander and Christoph do not follow a fixed recipe. They respond to each site, treating the harvested fruit individually, as the vintage demands, with only one goal: maximum quality. Sometimes there are more whole grapes, sometimes less. In this case, about 10% of the grapes are whole bunches, everything else has been destemmed. The grapes ferment openly before the young wine is filled into used wooden barrels of various sizes, where it matures and becomes supple. The nose opens with dark, ripe cherry fruit combined with lighter, delicate strawberry aromas and a mysterious, spicy vein that marbles the wine and its fragrance like intramuscular fat. With a little more air, wonderful juniper notes emerge and combine with earthy components. This transformation is wonderful and incredibly entertaining. The wine fills the palate powerfully with its athletic body, showing a fine-grained, noble structure that shapes the body. The long-lasting, crystal-clear finish is juicy and, yes, to the point. The fact that something like this grows in Germany is simply great! Well done, guys!
