A wine that’s already made quite a splash—well, obviously, it is a sparkling wine! No, all joking aside, this is a serious—because truly magnificent—sparkling wine, the kind you don’t often find in Switzerland. Pinot Noir, no dosage, bone-dry. The wine has taken on a veeeery light color; it smells heavenly of ripe cherries, subtly of yeast, and a bit of brioche—why brioche, I can’t say; maybe my nose is just off. But that’s not really important, because the wine is simply incredibly complex, wonderfully vinous, and only very slightly “sparkling” (exactly how I like it), with a robust structure, fine tannins, and great length. The finish is so juicy that you have to swallow again because the saliva is flowing in streams. Try this great sparkling wine.
