Just a few years ago, most winemakers let their Aligoté grow wild and paid little attention to it. Why? I don't know for sure, of course, but I believe it has something to do with the fact that the time spent in the vineyard rarely correlated with the results achieved in the bottle. Climate change has altered this relationship so significantly that quality-oriented winemakers quickly recognized the potential it now offers. Today, Aligoté can be harvested ripe even in challenging years, provided the winemaker does their job properly, as Florence does. It is wonderful how this Aligoté smells of white flowers, fresh hazelnuts, and cedar peel. A subtle hint of almonds appears here and there, giving the aroma a slightly new dimension. The wine is powerful but controlled on the palate, flowing silkily and displaying wonderfully ripe acidity that gives it plenty of energy, and the sensationally chalky finish is so long that your tongue keeps smacking.
