It is wonderful how the Bearwallow Chardonnay smells of spices, Tellycherry pepper, white flowers, vineyard peaches, and, yes, that's it, saffron – sorry Stefano, this is probably not a wine for you! A hint, but really just a hint of peppermint, or rather English peppermint, is also present and gives the bouquet a playful lightness.

The wine flows powerfully across the palate and takes up space. The acidity is wonderfully integrated and hits the spot, triggering an incredible flow of saliva and washing away the delicate tannins – yes, even white wines that have had no contact with the grape skins can do this – and pushing a fascinating, chalky note to the fore. The tongue clicks and clicks until the minerality takes over and the wine ends salty, long, very long. The Bearwallow Chardonnay is a serious wine, one that will richly reward all those who wait patiently for it. When you receive the wine, open one bottle right away and put the rest away for three or four years before you tuck in. You will realize how much the wine has gained just by giving it some time!
