There are loud, expressive Sauvignons, which some would call kitschy, and there are fruity but subtle ones that timidly strum the Sauvignon strings. Which type do you prefer? Or are you like me, who sometimes likes it loud and then restrained? This wine was aged in demi-muid barrels and is on the more restrained side in terms of aroma. It is only on the second sniff that elderflower and paprika aromas reveal themselves clearly. This could be because the wine has had a chance to breathe a little more, allowing the aromas to separate better. But in the end, it's not one of those wines that, with a lot of air, becomes one of those “I'm going to throw the full load of Sauvignon Blanc aromas right in your face” wines. The wine remains restrained and yet does not skimp on its charms. I would describe the bouquet as deliciously fruity, delicately spicy, and cheerful without being banal. This wine has substance, that much is clear from the first sip. It coats the palate without hesitation and creeps into the back of the mouth, leaving you amazed and happy to first sip and then smack your lips. The energy of this white wine is wonderful, as is its crisp, mineral finish. This is how I like Sauvignon Blanc very, very much!
