Guillaume acquired his theoretical knowledge of oenology in Dijon while studying at the Institut Jules Guyot. He gained practical experience with Olivier Leflaive in Puligny-Montrachet. At home in Ay, he now works alongside his brother Julien, an agronomist, on the family estate Henin-Delouvin. He carefully and thoughtfully contributes his knowledge to the winemaking process and plays a key role in the ever-improving quality of Henin-Delouvin wines. However, he indulges his curiosity in his own tiny project, in which he presses a pure Pinot Meunier that deserves your attention. But it may be difficult to get hold of even a single bottle.
