When given sufficient attention and the winemaker humbly takes a back seat and allows the wine space to develop, Pinot Meunier can produce something truly wonderful. Something like this wine, Guillaume's Les Terres Chaudron. The wine is grown in Cerseuil, a small hamlet a good distance west of Aÿ, which the young Henin cultivates organically. Aging in wooden barrels is intended to shape the wine, allowing it to mature in a controlled manner so that it will give us much pleasure soon after it goes on sale. And Guillaume has succeeded wonderfully in this. Les Terres Chaudron is a wine with a lot of character, one for a large Burgundy glass.
