L'Ouverture Blanc is a Chardonnay grown on or in the Côte Chalonnaise. Tino is friends with the winegrower and is not only sure that his buddy works sustainably, but also that he listens to him. Because half measures are not Tino's thing. The grapes are crushed by foot before being pressed in a vertical basket press. The must then ferments spontaneously in new Stockinger pièces (pièce is the Burgundy version of the barrique, which holds 228 liters, three liters more wine than the Bordeaux version of the barrel), where the wine is then allowed to mature on its full lees. Don't worry, this Chardonnay is far from being a wood bomb, because Tino, a perfectionist, takes the time every year to sniff every single barrel stave that Stockinger wants to use for his barrels to make sure that he only gets wood that flatters his wines. Before Tino bottles his wines, he carefully stabilizes them with a small dose of sulfur.
If you are lucky enough to see a bottle from Maison Glandien on the menu at one of our friends' restaurants, don't hesitate for a second to treat yourself to this wine, because wines from Tino Kuban are very, and I mean VERY, hard to find.
