Weiss, which Caroline and Benjamin can do at least as well as red – everyone is talking about their Aligoté. It's perfectly understandable that “the crowd” likes the Aligoté, but I can assure you, there is something even more refined, even more complex. That's right, it's this Savigny-lès-Beaune from the 1er Cru site of Les Peuillets that has taken my heart by storm! The bouquet is incredibly appealing. The aromas range from crisp fruit to crème patissier and (freshly toasted) butter brioche, while the high notes in the perfume come from freshly grated orange zest. Powerful yet controlled, the wine flows over the palate, revealing a firm structure that beautifully frames the fruit core. Suddenly, the wine reveals the acidity, which lifts it up on its toes and makes it dance. The finish is breathtaking, wonderfully salty, so wonderfully mineral. That's exactly how white wine from Burgundy should be!
