Les Bouffants is located in Chavignol and is one of the vineyards in the Sancerre appellation where every winemaker would love to own a plot. On limestone soil facing south, Thibauld has around 7,500 vines per hectare. That's quite a lot in this corner of France. What's more, it's really steep here, and the steeper the slope, the fewer vines are usually planted, as the water balance tends to be rather poor in such exposures, especially here. Bouffants is considered a rather early terroir. And no, it's not always an advantage to be able to harvest earlier in the fall, because this also means that the vines sprout earlier in the spring, greatly increasing the risk of frost. Bouffant is more of a gourmand type, built for comfort rather than speed. It smells wonderful, with aromas of cassis and figs. The door is wide open and you fall and fall and fall. It flows creamily across the palate until the acidity takes shape and ends with a straight, finely mineral finish. Chapeau!
